A cocktail made from ginlemon juice, sugar, and soda water. First memorialised in writing in 1876 by Jerry Thomas, “the father of American mixology“, this refreshing drink is typically served in a highball over ice.

INGREDIENTS

50mL Gin
25mL Lemon juice
25mL Sugar syrup
125mL Soda water

METHOD

1. Add the freshly squeezed lemon juice, sugar syrup and Bobby's gin to a clean highball glass and stir.
2. Add plenty of ice and stir again.
3. Top with soda water and stir a final time.
4. Lemon twist, to garnish.
