Clover Club


A classic gin cocktail consisting of gin, dry vermouth (preferably Dolin), lemon juice, raspberry syrup, and an egg white – to give it that creamy top.


60mL Gin
25mL Dry Vermouth (preferably Dolin)
25mL Lemon juice
10mL Raspberry syrup (recipe below)
1 Egg white
1 tsp Sugar
Fresh raspberries


1. Combine the ingredients in a cocktail shaker and shake well. A dry shake (without ice) allows the raw egg whites to froth and form a nice foamy top when poured.
2. Add ice and shake.
3. Pour through a strainer into a chilled coupe glass.
4. 3 fresh raspberries, to garnish.

Raspberry syrup: Add 1 cup sugar and 1/2 cup water to a pot. Stir over medium heat until the sugar has dissolved. Reduce heat to low, add 1/2 cup fresh raspberries. Fine-strain to remove any seeds.
