The favourite cocktail of gin guru (and owner of The Barbershop in Sydney) Mikey Enright, a gimlet is the perfect match for the flavours of Jensen’s Bermondsey Dry Gin.
INGREDIENTS
50mL Jensen’s Bermondsey Dry Gin
15mL lime cordial
30mL light tonic water
METHOD
Combine all the ingredients in a shaker with cubed ice, then shake and strain into a chilled glass. Garnish with a sage leaf and chipped ice.
To make your own lime cordial, sous-vide 1L of water and 3 peeled limes at 40 degrees Celsius for 1 hour. Add 3g citric acid 30g white sugar, stir, strain and allow to cool before using.
