Aperol Gin Sour

A wonderful twist on a gin sour with the addition of the Italian aperitif Aperol. The soft orange bitters perfectly compliment the sweet and herbaceous flavours of the maple syrup and rosemary. And unlike the Spritz this tipple is great all year-round.

INGREDIENTS

30mL Gin
30mL Aperol
20mL Lemon juice
10mL Maple syrup
Egg white
Fresh Rosemary

METHOD

1. Add 2 sprigs of rosemary (rub between fingers to release oils and aroma then add to shaker with the rest of the ingredients. Dry shake (without ice) for 30 secs.
2. Add ice and shake till chilled. Strain into a coupe.

For a stronger tipple increase both Aperol and gin to 40mLs.
