Winter Martini cocktail recipe
60mL Winter Gin
15mL vermouth
½ tsp of olive brine
olives
Add all ingredients to a cocktail shaker filled with ice. Stir (don’t shake!) and pour into a martini glass. Garnish with olives.

Sloe Gin Sour cocktail recipe
50 mL Plymouth Sloe Gin
20 mL simple syrup
25 mL lemon juice
10 mL egg white
Pour Sloe Gin, simple syrup, lemon juice and egg white into a shaker. Shake everything without ice. Add ice and shake again. Strain into a cocktail glass.

Their Sherry cask solera is made up of 42 casks, some from Spain and some from Australian Apera (fortified wine). 35mL Cumin espresso
35mL Creme de banana
7.5mL Sugar syrup
Shake down and double strain. Serve in a small cocktail glass. To make the Cumin espresso use 2.5g Cumin powder with 12 table spoons instant coffee (e.g Nespresso Intenso) and 500ml hot water. Combine the ingredients in a jug and stir until thoroughly mixed.

25mL Red wine
100mL Apple juice
Cloves
Add the ingredients to a small pan and warm up over a low heat. Serve in a mug.
