Pink Gin Fizz


A true taste of summer, serve this Pink Gin Fizz cocktail with fresh mint leaves, raspberries, lime and pink lemonade. A great blend of flavours perfect for summer or anytime!


60g fresh raspberries, plus extra, to serve
12 fresh mint leaves, plus extra, to serve
125mL gin
60mL fresh lime juice
2 tsp finely grated lime zest
1/2 cup crushed ice, plus extra, to serve
400mL Pink Lemonade


Serves 2
1. Thinly sliced lime halves, to serve.
2. Place two 185mL (3/4 cup) cocktail glasses in the freezer for 5 minutes to chill. Meanwhile, place the raspberries and mint in a cocktail shaker and use a rolling pin or muddling stick to muddle.
3. Add the gin, lime juice, lime zest and ice. Stir to combine. Cover and shake for 30 seconds. Place the extra ice in the chilled glasses.
4. Strain the raspberry mixture into the glasses. Top with pink lemonade. Decorate with lime slices, extra raspberries and extra mint leaves. Serve immediately.
