A fresh floral twist on a Tom Collins cocktail: using lavender syrup, gin, soda water and lemon juice.


45mL Gin
30mL Lemon Juice
15mL Homemade Lavender Syrup - sugar and dried lavender (see notes)
Soda Water
Fresh Lavender Sprigs


1. Add gin, lemon juice and lavender syrup to a cocktail shaker with ice and shake well.
2. Strain into an ice-filled glass.
3. Top with a soda water and gently stir.
4. Lemon slices and lavender sprigs, to garnish.

How do you make Lavender Syrup? Add 1/2 cup water and 1/4 cup lavender to a sauce pan and bring to a boil. Simmer for 3 minutes, then remove from heat and set for 20 minutes. Strain out flowers. In a new saucepan add 1/2 cup of sugar and 3 tbsp of water. Bring to a boil, stirring to sugar until dissolved. Simmer for 3-4 minutes, then stir in lavender liquid. Whisk until fully combined the remove from heat, cool and store in an air tight container.
