Just as a gargoyle on a cathedral keeps away bad spirits, this Gargoyle cocktail ensures nothing gets in the way of a good time!

INGREDIENTS

45mL Gothic Gin
4 fresh cucumber slices, diced
4–5 fresh mint leaves
50mL sweet-and-sour mix*
Splash of Sprite or lemonade
Extra mint, to garnish

*If you don’t have access to sweet-and-sour mix, use 30mL lime juice and 20mL simple syrup

METHOD

1. Muddle cucumber and mint in a cocktail shaker.
2. Fill shaker with ice, pour over gin and sweet-and-sour mix.
3. Shake well to combine.
4. Strain into a highball glass and top up with lemonade.
5. Garnish with a few mint leaves.
