Our Signature gin utilises 21 carefully selected organic botanicals, gathered both locally, and from around the world, that blend together to create a balanced and fragrant London dry style gin. A perfect hefty mix of juniper, accompanied by herbs, florals and fruits, our Signature gin has a lively, warm mouth feel and can be enjoyed in a variety of different ways, even on its own over ice.
Using a traditional single-shot process in our copper still, the heavier botanicals are distilled in organic cane base alcohol, while finer fruits and florals are infused into the vapor path.

GIN SOCIETY TASTING NOTES
You’d think this would make for a busy gin, but on the contrary, Stuart has intelligently crafted a gin that has a generous mouth feel, with the juniper in the foreground as it should be, but supported and layered by the other botanicals in a closely woven flavour profile, so as you sip it, you can pick put the heat of the peppercorns, or the star anise and liquorice underneath, with a crisp finish that lingers on.
The gin is also rounded on the palette due to its refined base spirit, made from sugar cane, one of the few distilleries in Australia to use this. It provides a lends for a generous mouth feel for the botanicals to infuse.
Well, this gin can certainly be appreciated over ice, with a garnish that accentuates one of it’s botanicals depending on your taste. But it sings to be in a crisp, cold Martini. With so much going on in the gin, there is no need to try to compete with your Vermouth, the drier the better, I recommend the French Dry Dolin, or if you wanted some more citrus forward, the Regal Rogue Daring Dry. I suggest a single olive garnish.
But it also worked just fine in a Dirty Martini, where those spicier botanicals and the generous juniper stand up very well.
